Ingredients:

  • 4 fillets of fish (preferably halibut or cod)
  • 4 cups of fish stock
  • 1 cup of heavy cream
  • 2 egg yolks
  • 3 tablespoons of butter
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 leek, cleaned and chopped
  • 1 bunch of fresh parsley, chopped

Preparation:

  1. Begin by prepping the vegetables. Heat 2 tablespoons of butter in a large pot and sauté the onions, carrots, celery, leek and garlic until softened.
  2. Now, add the fish stock, bay leaf, salt and pepper to the pot and bring it to a boil.
  3. Once the stock starts boiling, reduce the heat to low and add the fish fillets. Poach the fish for 8 to 10 minutes or until fully cooked.
  4. Remove the fish from the pot and set it aside.
  5. In a separate bowl, whisk together the egg yolks and heavy cream until fully combined.
  6. Slowly pour the egg mixture into the pot while stirring constantly to prevent curdling. Simmer for 3 to 4 minutes till the sauce thickens.
  7. Now, add back the fish and chopped parsley to the pot and let it cook for another 5 minutes.
  8. Check for seasoning and adjust it according to your taste.
  9. Your Fish Waterzoi is ready to be served hot!
