Focaccia with Red Onions and Thyme Recipe

Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 cup warm water
  • 1/4 cup olive oil, divided
  • 1 large red onion, thinly sliced
  • 2 tablespoons fresh thyme, chopped
  • Coarse salt, for sprinkling

Instructions:

  1. In a large mixing bowl, combine the flour, yeast and salt. Stir in water and 2 tablespoons of olive oil until a sticky dough forms. Knead the dough until it is smooth and elastic.
  2. Form dough into a ball and place it into a greased bowl. Coat the surface lightly with olive oil and cover the bowl with a damp cloth. Leave the bowl with the dough in a warm place for an hour or until the dough has doubled in size.
  3. Preheat oven to 425°F (220°C). On a lightly floured surface, roll out the dough into a rectangle or a circle of your desired size.
  4. Place the dough onto a baking sheet lined with parchment paper. Brush remaining olive oil on top of the dough, leaving 1/2 inch border around the edges.
  5. Arrange the onion slices on top of the dough and sprinkle the thyme over them. Press the onions and thyme lightly into the dough. Season with coarse salt.
  6. Bake for 20-25 minutes or until the bottom of the bread is golden brown and the top is crispy. Transfer to a rack to cool before slicing and serving.
