Focaccia with Red Onions and Thyme Recipe
Ingredients:
- 3 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 teaspoon salt
- 1 cup warm water
- 1/4 cup olive oil, divided
- 1 large red onion, thinly sliced
- 2 tablespoons fresh thyme, chopped
- Coarse salt, for sprinkling
Instructions:
- In a large mixing bowl, combine the flour, yeast and salt. Stir in water and 2 tablespoons of olive oil until a sticky dough forms. Knead the dough until it is smooth and elastic.
- Form dough into a ball and place it into a greased bowl. Coat the surface lightly with olive oil and cover the bowl with a damp cloth. Leave the bowl with the dough in a warm place for an hour or until the dough has doubled in size.
- Preheat oven to 425°F (220°C). On a lightly floured surface, roll out the dough into a rectangle or a circle of your desired size.
- Place the dough onto a baking sheet lined with parchment paper. Brush remaining olive oil on top of the dough, leaving 1/2 inch border around the edges.
- Arrange the onion slices on top of the dough and sprinkle the thyme over them. Press the onions and thyme lightly into the dough. Season with coarse salt.
- Bake for 20-25 minutes or until the bottom of the bread is golden brown and the top is crispy. Transfer to a rack to cool before slicing and serving.
