Fresh Lamb and Goat Cheese Omelet

Ingredients:

  • 2 lamb chops, boneless
  • 4 eggs
  • 2 tbsp milk
  • 2 tbsp butter, unsalted
  • 1/4 cup crumbled goat cheese
  • Salt and pepper to taste
  • Fresh parsley (optional)

Directions:

  1. Preheat oven to 375°F.
  2. Cook lamb chops in a skillet over medium-high heat for 3-4 minutes on each side, until browned. Set aside and allow to cool before dicing into small pieces.
  3. In a small bowl, whisk together eggs, milk, salt, and pepper.
  4. In a nonstick skillet, heat butter over medium heat until melted and bubbling.
  5. Pour the egg mixture into the skillet and gently stir the eggs as they cook, pushing the cooked portions of egg to the center of the skillet and allowing the uncooked egg to flow underneath.
  6. When the eggs are nearly set but still slightly glossy on top, add the lamb and crumbled goat cheese to one side of the omelet.
  7. Using a spatula, fold the other side of the omelet over the lamb and goat cheese. Press gently with the spatula to seal the omelet closed.
  8. Bake in preheated oven for 5-7 minutes, or until cheese is melted and omelet is cooked through.
  9. Remove from oven and sprinkle with fresh parsley (optional).
