Ingredients:

  • 2 cups cooked rice
  • 1 lb boneless, skinless chicken breast, diced into small pieces

  • 1/2 cup all-purpose flour

  • 1/4 cup sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 eggs, scrambled

Directions:

  1. In a large bowl, mix together flour, breadcrumbs, sesame seeds, salt, and pepper. Add in the diced chicken and coat well with the mixture.

  6. Add the cooked chicken, cooked split peas, and cooked eggs to the pan with the rice. Mix well until all ingredients are combined and heated through.
  7. Transfer the fried rice to a serving dish and sprinkle split pea granola on top. Serve hot with additional soy sauce on the side if desired.
