Frittata with Morels

Ingredients:

  • 8 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 1 shallot, diced
  • 1 clove garlic, minced
  • 1 cup fresh morel mushrooms, cleaned and sliced
  • 1/2 cup grated gruyere cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.
  3. In a large oven-safe skillet over medium heat, melt the butter. Add in the diced shallot and minced garlic, sauté until the shallot is softened and garlic is fragrant for about 2 to 3 minutes.
  4. Stir in the sliced morels mushrooms until they are slightly soft and browned, sauté for about 8 to 10 minutes.
  5. Pour the egg mixture into the skillet with the mushrooms and cook for about 2 to 3 minutes or until the eggs are set on the bottom and begin to set on top.
  6. Sprinkle the grated gruyere cheese on top and place the skillet in the preheated oven. Bake for about 10-12 minutes or until the cheese is melted and bubbly, and the eggs are cooked all the way through.
  7. Remove the skillet from the oven, sprinkle with chopped fresh parsley on top of the frittata.
  8. Serve hot with freshly baked bread and a salad, if desired.
