Giant Mushroom Croque-Monsieur Recipe

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • 8 slices of bread
  • 8 slices of ham
  • 8 slices of Swiss cheese
  • 1/4 cup of butter, melted
  • 1/4 cup of all-purpose flour
  • 1 1/2 cups of milk
  • 1/4 cup of grated Parmesan cheese
  • 1/4 teaspoon of ground nutmeg
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the portobello mushrooms gill-side down on a baking sheet and bake for 10 minutes.
  3. Flip the mushrooms over and bake for an additional 10 minutes.
  4. Meanwhile, make the béchamel sauce. Melt the butter in a saucepan over medium heat and whisk in the flour until smooth.
  5. Slowly pour in the milk, whisking constantly until the sauce thickens.
  6. Add in the Parmesan cheese, nutmeg, salt, and pepper, and whisk until well combined.
  7. Take the mushrooms out of the oven and flip them so they are gill-side up.
  8. On four of the slices of bread, place a slice of ham, a slice of Swiss cheese, and a mushroom each. Top each sandwich with another slice of bread and brush the tops with melted butter.
  9. Place the sandwiches on a baking sheet and bake for 10 minutes.
  10. Take the sandwiches out of the oven and remove the top slices of bread.
  11. Divide the béchamel sauce among the four sandwiches.
  12. Place the top slices of bread back on top of the sandwiches and brush with more melted butter.
  13. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
