Gratin Dauphinois with Chorizo
Ingredients:
- 1kg potatoes
- 200g chorizo, sliced
- 2 garlic cloves, crushed
- 250ml double cream
- 100ml milk
- 100g gruyere cheese, grated
- 1 tbsp butter
- Salt and pepper to taste
Instructions:
- Preheat your oven to 200°C / 180°C fan / gas mark 6.
- Peel the potatoes and slice them thinly.
- In a frying pan, cook the chorizo until it starts to crisp up.
- Add in the garlic and cook for another 30 seconds, then remove from heat.
- In a saucepan, heat the cream and milk together.
- Butter a large baking dish, and spread a layer of potato slices on the bottom of the dish, overlapping slightly.
- Add a layer of chorizo, then sprinkle with a layer of grated cheese.
- Repeat layers until all the ingredients are used up.
- Pour the heated cream and milk over the potatoes and sprinkle with salt and pepper.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for a further 15-20 minutes until the top is golden and the potatoes are cooked through.
Serving Suggestions:
Serve hot as a side dish with any meat such as steak or roasted chicken. You can also top with chopped parsley or chives to add a pop of freshness.
