Gratin Dauphinois with Chorizo

Ingredients:

  • 1kg potatoes
  • 200g chorizo, sliced
  • 2 garlic cloves, crushed
  • 250ml double cream
  • 100ml milk
  • 100g gruyere cheese, grated
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200°C / 180°C fan / gas mark 6.
  2. Peel the potatoes and slice them thinly.
  3. In a frying pan, cook the chorizo until it starts to crisp up.
  4. Add in the garlic and cook for another 30 seconds, then remove from heat.
  5. In a saucepan, heat the cream and milk together.
  6. Butter a large baking dish, and spread a layer of potato slices on the bottom of the dish, overlapping slightly.
  7. Add a layer of chorizo, then sprinkle with a layer of grated cheese.
  8. Repeat layers until all the ingredients are used up.
  9. Pour the heated cream and milk over the potatoes and sprinkle with salt and pepper.
  10. Cover the dish with foil and bake for 45 minutes.
  11. Remove the foil and bake for a further 15-20 minutes until the top is golden and the potatoes are cooked through.

Serving Suggestions:

Serve hot as a side dish with any meat such as steak or roasted chicken. You can also top with chopped parsley or chives to add a pop of freshness.
