Green beans and peaches, sesame vinaigrette

Green Beans and Peaches with Sesame Vinaigrette

Ingredients:

  • 1 pound fresh green beans
  • 2 large ripe peaches, pitted and sliced
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds, toasted
  • Salt and black pepper to taste

Instructions:

  1. Blanch the green beans in a large pot of salted boiling water for 3-4 minutes, until bright green and slightly tender. Drain and rinse under cold water to stop the cooking process.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, honey, soy sauce, sesame seeds, salt and pepper until the ingredients are well combined.
  3. Toss the green beans and peach slices with the sesame vinaigrette in a large bowl until evenly coated.
  4. Serve the green beans and peaches in a large plate, garnished with extra toasted sesame seeds and chopped fresh cilantro, if desired.

Verdict:

This green beans and peaches with sesame vinaigrette is a perfect combination of sweet and savory, with a nutty sesame flavor that complements the slight tartness and juiciness of the peaches. The vinaigrette brings a harmony to the dish that includes different textures such as the crunchiness of the green beans, and the soft and fleshy of the peach.

Serving Suggestions:

This salad is great as a side dish to many mains: roasted chicken, grilled fish or tofu, or stirred with some sautéed beef strips. Additionally, this salad is ideal for season transitions: summer to autumn or winter to spring.
