Harira: Traditional Recipe
Ingredients:
- 1 cup dried chickpeas, soaked overnight
- 1/2 cup lentils
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground ginger
- 2 teaspoons turmeric
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh celery
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup lemon juice
- 8 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions:
- In a large soup pot, sauté onions and garlic until onions are soft and golden brown.
- Add all the spices, parsley, cilantro, and celery and cook for 1-2 minutes until fragrant.
- Add chickpeas, lentils, diced tomatoes, lemon juice and broth to the pot and mix well.
- Bring to a boil, then reduce heat to low and let simmer for 1-2 hours until chickpeas and lentils are tender.
- Season with salt and pepper to taste.
- Serve hot with a sprinkle of fresh cilantro on top, and with warm bread on the side.
