Housewife-style veal shank: recipe by Paul Bocuse
Ingredients:
- 4 veal shanks, about 1 1/2 inches thick
- 1 cup flour
- 2 teaspoons salt

Instructions:
- Preheat oven to 375 degrees F.
- Combine flour, salt, and pepper in a bowl.
- Dredge each veal shank in flour mixture, shaking off excess.
- In a large Dutch oven, melt butter and olive oil over medium-high heat.
- When hot, brown the veal shanks on all sides, about 10 minutes total; remove from the pot and set aside.
- Add onions, celery, carrots, garlic, bay leaf, and thyme to the pot; cook about 10 minutes, stirring occasionally, until vegetables are lightly caramelized and wilted.
- Return veal shanks to the pot; pour beef broth and red wine over the vegetables and shanks.
- Add diced tomatoes to the pot and bring to a simmer.
- Cover the pot with a lid and place into the preheated oven. Bake for about 1 1/2 hours, or until the meat is very tender and almost falling off the bone.
- Remove the pot from the oven and transfer the veal shanks to a large platter.
- Return the pot to the stovetop and simmer the jus until lightly thickened. Adjust seasoning with salt and pepper as needed.
- Once the jus is finished, pour over the shanks.
