Housewife-style veal shank: recipe by Paul Bocuse

Ingredients:

  • 4 veal shanks, about 1 1/2 inches thick
  • 1 cup flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots

  • 2 cups beef broth
  • 1 cup dry red wine
  • 1 can (14.5 ounces) diced tomatoes
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Combine flour, salt, and pepper in a bowl.
  3. Dredge each veal shank in flour mixture, shaking off excess.
  4. In a large Dutch oven, melt butter and olive oil over medium-high heat.
  5. When hot, brown the veal shanks on all sides, about 10 minutes total; remove from the pot and set aside.
  6. Add onions, celery, carrots, garlic, bay leaf, and thyme to the pot; cook about 10 minutes, stirring occasionally, until vegetables are lightly caramelized and wilted.
  7. Return veal shanks to the pot; pour beef broth and red wine over the vegetables and shanks.
  8. Add diced tomatoes to the pot and bring to a simmer.
  9. Cover the pot with a lid and place into the preheated oven. Bake for about 1 1/2 hours, or until the meat is very tender and almost falling off the bone.
  10. Remove the pot from the oven and transfer the veal shanks to a large platter.
  11. Return the pot to the stovetop and simmer the jus until lightly thickened. Adjust seasoning with salt and pepper as needed.
  12. Once the jus is finished, pour over the shanks.
