Ingredients

  • 1 lb of beef chuck roast, cut into 1-inch cubes
  • 2 large carrots, sliced diagonally in 1-inch pieces
  • 2 medium onions, cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 Tbsp vegetable oil
  • 4 cups of water
  • 3 Tbsp miso paste
  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 stalks green onions, thinly sliced for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add garlic and onion, sauté for 2-3 minutes or until fragrant.
  2. Add beef cubes and sauté for 3-5 minutes or until browned on all sides.
  3. Add carrots and continue cooking for an additional 3-5 minutes, stirring occasionally.
  4. Pour water into the pot, then add miso paste, soy sauce, sugar, salt, and black pepper. Stir until the miso paste is dissolved.
  5. Bring the stew to a boil, then lower the heat to a simmer. Cover with a lid and cook for 45-60 minutes or until the beef is tender.
  6. Garnish with sliced green onions and serve hot with steamed rice or udon noodles.
