Jiaozi: Peking Dumplings

Ingredients:

  • 1 pound ground pork
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves of garlic, minced
  • 1 tablespoon minced ginger
  • 1 cup shredded cabbage
  • 1/2 cup chopped scallions
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 package of dumpling wrappers (about 50)
  • Water

Instructions:

  1. In a large bowl, mix together the ground pork, vegetable oil and sesame oil.
  2. Add the minced garlic, minced ginger, shredded cabbage, chopped scallions, soy sauce and rice vinegar. Mix well.
  3. Sprinkle the cornstarch over the mixture and mix again until everything is well incorporated.
  4. Take a dumpling wrapper and spoon about a tablespoon of the pork mixture into the center of the wrapper.
  5. Use your finger or a small brush to brush a bit of water around the outside edge of the wrapper. This will help the wrapper to stick together.
  6. Bring the two edges of the wrapper together and pinch them together in the center. Pinch the remaining edges of the wrapper together, making pleats as you go along to seal the dumpling.
  7. Repeat with all the remaining wrappers and filling.
  8. To cook the dumplings, fill a large pot with water and bring it to a boil.
  9. Add half of the dumplings to the pot and let them cook for about 5-6 minutes, until they float to the surface and the pork is cooked through.
  10. Remove the dumplings with a slotted spoon and repeat with the remaining dumplings.

Serving Suggestions:

Serve these jiaozi with soy sauce and rice vinegar for dipping. You can also pan-fry, steam or boil the dumplings depending on your preference. These dumplings are perfect as snacks or as part of a meal. Enjoy!
