John Dory with Fennel, Herb and Spice Marinade Recipe

Ingredients:

  • 4 John Dory fillets, about 150g each
  • 2 fennel bulbs, sliced thinly
  • 2 teaspoons coriander seeds, crushed
  • 1 teaspoon cumin seeds, crushed
  • 1 teaspoon paprika
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and black pepper, to taste

Instructions:

  1. Preheat oven to 220°C.
  2. In a small bowl, combine coriander seeds, cumin seeds, paprika, thyme, parsley, garlic, olive oil, salt and pepper. Stir well to mix.
  3. Place fennel slices on the bottom of a baking dish that is large enough to hold the fish fillets in a single layer. Spread marinade over the fennel and toss to coat well.
  4. Add the John Dory fillets on top of the fennel in a single layer.
  5. Bake in the oven for 15-20 minutes, or until fish is cooked through and flakes easily with a fork.
  6. Serve hot.
