Kabyle Semolina Dumplings Recipe
Ingredients:
- 1 cup fine semolina
- 1/4 cup olive oil
- 1/2 tsp salt (or to taste)
- 1/2 tsp ground black pepper (or to taste)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp turmeric powder
- 1/4 cup water (or more if needed)
- 2 cloves of garlic, minced
- Handful of fresh parsley, chopped
Instructions:
- In a mixing bowl, add semolina, olive oil, salt, black pepper, cumin, coriander, turmeric powder and mix well.
- Add the minced garlic and chopped parsley to the same mixing bowl.
- Add water gradually to the dry ingredients, stirring constantly until the semolina mixture comes together to form a smooth, workable dough. If the dough is too dry, add more water, one tablespoon at a time.
- Form the dough into small balls or oval shapes (around the size of a ping-pong ball).
- Place the semolina balls in a steamer basket over simmering water and steam for 15-20 minutes, until cooked through.
- Serve hot and enjoy!
