Kabyle Semolina Dumplings Recipe

Ingredients:

  • 1 cup fine semolina
  • 1/4 cup olive oil
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp ground black pepper (or to taste)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp turmeric powder
  • 1/4 cup water (or more if needed)
  • 2 cloves of garlic, minced
  • Handful of fresh parsley, chopped

Instructions:

  1. In a mixing bowl, add semolina, olive oil, salt, black pepper, cumin, coriander, turmeric powder and mix well.
  2. Add the minced garlic and chopped parsley to the same mixing bowl.
  3. Add water gradually to the dry ingredients, stirring constantly until the semolina mixture comes together to form a smooth, workable dough. If the dough is too dry, add more water, one tablespoon at a time.
  4. Form the dough into small balls or oval shapes (around the size of a ping-pong ball).
  5. Place the semolina balls in a steamer basket over simmering water and steam for 15-20 minutes, until cooked through.
  6. Serve hot and enjoy!
