Khao Phat (Thai Fried Rice)
Ingredients:
- 2 cups of cooked jasmine rice
- 1/2 cup of chopped mixed vegetables (carrots, peas, corn)
- 1/2 cup of chopped onions
- 1/4 cup of chopped garlic
- 2 tbsp of vegetable oil
- 2 eggs, beaten
- 1 tbsp of soy sauce
- 1/2 tbsp of fish sauce
- 1/2 tsp of sugar
- 1/4 tsp of salt

Instructions:
- Heat the vegetable oil in a wok or large skillet over medium-high heat.

- Push the vegetables to the side of the wok or skillet and add the beaten eggs to the center. Scramble the eggs until they are cooked through, then mix them in with the vegetables.
- Add the cooked jasmine rice to the wok or skillet and stir-fry until it is heated through and well combined with the vegetable and egg mixture.
- Season with soy sauce, fish sauce, sugar, salt, and black pepper, stirring well to combine all the flavours.
- Stir-fry for another 1-2 minutes until the rice is slightly crispy on the outside.
- Remove from heat and serve hot.
