Lamb, Apricots and Almonds Recipe
Ingredients:
- 1 lb lamb shoulder, cubed
- 1 cup dried apricots, soaked in warm water for 30 minutes and chopped
- 1/2 cup almonds, sliced and toasted
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/4 cup honey
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
- In a large skillet over medium heat, add olive oil and sauté the onions for about 5 minutes or until they become translucent.
- Add the garlic and sauté for another minute or until fragrant.
- Add the lamb and brown it for about 5 minutes or until no longer pink.
- Stir in cumin, cinnamon, ginger, coriander, salt and pepper and cook for another 2 minutes until fragrant.
- Add chicken broth, honey and chopped apricots, and bring everything to a boil.
- Once boiling reduce heat to a simmer, cover, and let cook for 45 minutes, until lamb is tender and apricots are soft and plump.
- Remove from heat and let it stand for 5 minutes.
- Stir in toasted almonds into the lamb.
- Place the lamb, apricots and almonds on a serving dish and garnish with fresh parsley.
