Lamb Curry with Red Peppers Recipe

Ingredients:

  • 1 1/2 pounds lamb shoulder, cut into 1-inch chunks
  • 2 red bell peppers, seeded and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons vegetable oil
