Ingredients:

  • 4 lamb shanks
  • 2 cups of carrots, chopped
  • 2 cups of zucchini, chopped
  • 2 cups of beans, cut into bite-size pieces
  • 4 garlic cloves, minced
  • 2 tablespoons of olive oil
  • 2 cups of chicken or beef broth
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 325°F.
  2. Sprinkle salt and pepper all over the lamb shanks.
  3. In a large skillet over medium-high heat, heat the olive oil until hot. Add the lamb shanks and brown on all sides until golden brown. Remove the lamb shanks from the skillet and set aside.
