Ingredients:

  • 4 lamb shanks
  • 1 onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 cups beef stock
  • 2 cups chicken stock
  • 1 can diced tomatoes
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 1 tsp dried thyme

Instructions:

  1. Preheat the oven to 350°F/180°C.
  2. Season the lamb shanks with salt and pepper.
  3. In a Dutch oven or oven-proof pot, heat the olive oil over medium high heat.
  4. Sear the lamb shanks on all sides until nicely browned. Remove from the pot and set aside.
  5. In the same pot, add the onions and garlic and cook until softened, stirring frequently.
  6. Add the beef and chicken stock, diced tomatoes, carrots, celery, bay leaves, dried thyme, dried rosemary, and paprika. Stir well.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for about 5 minutes.
  8. Return the lamb shanks to the pot, making sure they are well immersed in the liquid.
  9. Cover the pot with a tight-fitting lid and transfer it to the preheated oven.
  10. Bake for approximately 2 hours or until the meat is very tender and falls off the bone.
