Lamb shank with cider – Delicious

Lamb Shank with Cider Recipe

Ingredients:

  • 4 lamb shanks, excess fat trimmed
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons plain flour
  • 2 cups apple cider
  • 1 cup chicken stock
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C/350°F.
  2. Heat the olive oil in a large, heavy-bottomed casserole dish over medium heat.
  3. Add the lamb shanks and brown on all sides. Remove from the dish and set aside.
  4. Add the onion and garlic to the same dish and cook until softened.
  5. Sprinkle the flour over the onion and garlic mixture. Stir constantly until the flour is cooked and slightly browned.
  6. Add the apple cider and chicken stock to the dish. Stir and scrape the bottom of the dish to release any browned bits.
  7. Add the rosemary, thyme, bay leaves, salt and pepper and stir until combined.
  8. Return the lamb shanks to the dish, spooning the sauce over them to coat. Cover the dish with a lid and bake for 2 and a half hours, or until the lamb is tender.
  9. Remove from the oven and let rest for a few minutes. Skim any excess fat from the surface of the sauce.
  10. Serve the lamb shanks with the sauce and your choice of sides such as roasted potatoes, steamed vegetables or mashed potatoes.

Verdict:

This lamb shank with cider recipe is a perfect dish to serve for a special occasion or when you want to impress your guests. The lamb is fall-off-the-bone tender and the cider-infused sauce adds a delicious sweetness and depth of flavour.

Serving Suggestions:

This dish pairs well with roasted potatoes, steamed vegetables or mashed potatoes. You can also sprinkle some chopped fresh parsley over the lamb shanks and sauce for a pop of colour and brightness.
