Lamb Shank with Cider Recipe
Ingredients:
- 4 lamb shanks, excess fat trimmed
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons plain flour
- 2 cups apple cider
- 1 cup chicken stock
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C/350°F.
- Heat the olive oil in a large, heavy-bottomed casserole dish over medium heat.
- Add the lamb shanks and brown on all sides. Remove from the dish and set aside.
- Add the onion and garlic to the same dish and cook until softened.
- Sprinkle the flour over the onion and garlic mixture. Stir constantly until the flour is cooked and slightly browned.
- Add the apple cider and chicken stock to the dish. Stir and scrape the bottom of the dish to release any browned bits.
- Add the rosemary, thyme, bay leaves, salt and pepper and stir until combined.
- Return the lamb shanks to the dish, spooning the sauce over them to coat. Cover the dish with a lid and bake for 2 and a half hours, or until the lamb is tender.
- Remove from the oven and let rest for a few minutes. Skim any excess fat from the surface of the sauce.
- Serve the lamb shanks with the sauce and your choice of sides such as roasted potatoes, steamed vegetables or mashed potatoes.
