Lamb Tagine Recipe

Ingredients

  • 2 lbs. lamb shoulder, cut into 2 inch chunks
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cumin
  • 2 tsp. paprika
  • 1/2 tsp. cayenne pepper
  • 2 tbsp. olive oil
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 2 cups chicken stock
  • 1 tbsp. honey
  • 1 tbsp. fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the lamb and cook until browned on all sides, about 5 minutes.
  3. Add the onion and garlic and cook until softened, about 3 minutes.
  4. Add the ginger, cinnamon, cumin, paprika, cayenne pepper, and salt and pepper to taste. Stir to coat the lamb and vegetables in the spices.
  5. Add the dried apricots, raisins, chicken stock, and honey. Bring the mixture to a simmer.
  6. Reduce the heat to low and cover the pot. Allow the lamb tagine to simmer for 1 1/2 to 2 hours, or until the lamb is tender and falls apart easily.
  7. Remove the lid and allow the sauce to thicken slightly, about 10-15 minutes.
  8. Stir in the chopped parsley and serve.
