Lasagna with Caramelized Langoustines and Three Cabbages

Ingredients

  • 1 pack lasagna noodles
  • 1 lb langoustines, peeled and deveined
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 head white cabbage, sliced
  • 1 head red cabbage, sliced
  • 1 head savoy cabbage, sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Boil lasagna noodles according to package instructions. Drain and set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  4. Add langoustines to the pan and cook until caramelized, about 2-3 minutes on each side. Remove from the pan and set aside.
  5. In the same skillet, add butter and the remaining olive oil. Sauté onions and garlic until soft and fragrant.
  6. Add all three types of cabbage and sauté until wilted, about 10-15 minutes. Add heavy cream and season with salt and pepper. Cook until the sauce is thick and creamy.
  7. To assemble the lasagna, spoon a thin layer of the cabbage mixture onto the bottom of a 9×13-inch baking dish. Add a layer of lasagna noodles on top, followed by another layer of the cabbage mixture.
  8. Add a layer of langoustines on top, followed by another layer of lasagna noodles and the remaining cabbage mixture. Sprinkle the top layer with grated Parmesan cheese.
  9. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 15 minutes or until bubbly and golden brown on top.
  10. Remove from oven and let sit for 10 minutes before slicing. Serve hot.
