Linguine with Courgette Strips and Parsley-Pistachio Pesto Recipe

Ingredients:

  • 400g linguine
  • 4 medium courgettes, cut into thin strips
  • 1/2 cup flat-leaf parsley, roughly chopped
  • 1/2 cup roasted pistachios, roughly chopped
  • 2 garlic cloves, minced
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup grated parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente.
  2. Meanwhile, heat 2 tablespoons of olive oil in a large pan over medium heat. Add the courgette strips and sauté for about 5-7 minutes, or until tender and lightly golden brown. Season with salt and pepper to taste.
  3. In a food processor, combine the parsley, pistachios, garlic, and remaining olive oil. Process until smooth. Transfer to a bowl and stir in the parmesan cheese. Season with salt and pepper to taste.
  4. When the pasta is cooked, drain it and reserve 1/2 cup of the cooking water.
  5. Return the pasta to the pot and add the courgette strips, pesto, and reserved cooking water. Toss everything together until the pesto coats the pasta and everything is heated through.
  6. Serve hot with extra parmesan cheese and pistachios on top, if desired.
