Lobster with Artichokes, Truffles and Yellow Wine Recipe
Ingredients:
- 1 lobster
- 6 artichokes
- 2 tbsp of truffle oil
- 1 cup of white wine
- 1 cup of yellow wine
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bunch of parsley, chopped
- 2 tbsp of butter
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Begin by cleaning and trimming the artichokes. Remove the outer leaves and cut off the top third of the artichoke. Cut each artichoke into quarters and remove the choke. Place the artichokes in a bowl of water with lemon juice to prevent browning.
- Cut the lobster into two parts and remove the digestive system. Save the claws and tail for later.
- In a saucepan, sauté the onion and garlic in the butter until they are fragrant. Add the artichokes, wine, and parsley, and season with salt and pepper. Bring everything to a boil, then reduce the heat and let it simmer until the artichokes are tender.
- In a separate saucepan, add the yellow wine and reduce by half. Add the truffle oil and set aside.
- Place the lobster halves in a baking dish and add the artichoke mixture around it. Bake in preheated oven for 10-12 minutes until the lobster is cooked through.
- Serve the lobster with the reduced yellow wine and truffle sauce.
Verdict:
The combination of the lobster, artichokes, and truffle oil creates a unique and delicious flavor that will impress any dinner guest. The yellow wine adds a sweet and fruity note that perfectly complements the dish.
