Lofoten Soup – Treat

Ingredients:

  • 1 lb Fresh halibut
  • 1/2 lb Fresh shrimp
  • 1/2 lb Fresh crab meat
  • 2-3 cloves Garlic, minced
  • 1/2 Onion, chopped
  • 1 Celery stalk, chopped
  • 1 Carrot, chopped
  • 1 Red bell pepper, chopped
  • 1/4 cup Butter
  • 1/4 cup Flour
  • 4 cups Fish stock
  • 1 cup Heavy cream
  • 1 cup Milk
  • 1/4 Cup White wine
  • 1 Bay leaf
  • 1/4 tsp Ground nutmeg
  • Salt and pepper to taste
  • Sour cream and fresh herbs (optional)

Instructions:

  1. Cut halibut, shrimp, and crab meat into pieces. Set aside.
  2. In a soup pot, melt butter over medium heat. Add garlic and onion, and saute until onion is translucent.
  3. Add celery, carrots, and red bell pepper. Cook for 5-7 minutes or until vegetables are tender.
  4. Sprinkle flour over vegetables, and stir to combine.
  5. Gradually pour in fish stock while whisking to avoid lumps. Add white wine and bay leaf.
  6. Bring soup to a boil. Reduce heat and stir in heavy cream, milk, nutmeg, salt and pepper.
  7. Add halibut, shrimp, and crab meat to the soup.
  8. Simmer gently for 5-7 minutes or until fish is cooked through and shrimp turns pink.
  9. Remove bay leaf. Serve hot, with a dollop of sour cream and fresh herbs (optional).
