Lofoten Soup – Treat
Ingredients:
- 1 lb Fresh halibut
- 1/2 lb Fresh shrimp
- 1/2 lb Fresh crab meat
- 2-3 cloves Garlic, minced
- 1/2 Onion, chopped
- 1 Celery stalk, chopped
- 1 Carrot, chopped
- 1 Red bell pepper, chopped
- 1/4 cup Butter
- 1/4 cup Flour
- 4 cups Fish stock
- 1 cup Heavy cream
- 1 cup Milk
- 1/4 Cup White wine
- 1 Bay leaf
- 1/4 tsp Ground nutmeg
- Salt and pepper to taste
- Sour cream and fresh herbs (optional)
Instructions:
- Cut halibut, shrimp, and crab meat into pieces. Set aside.
- In a soup pot, melt butter over medium heat. Add garlic and onion, and saute until onion is translucent.
- Add celery, carrots, and red bell pepper. Cook for 5-7 minutes or until vegetables are tender.
- Sprinkle flour over vegetables, and stir to combine.
- Gradually pour in fish stock while whisking to avoid lumps. Add white wine and bay leaf.
- Bring soup to a boil. Reduce heat and stir in heavy cream, milk, nutmeg, salt and pepper.
- Add halibut, shrimp, and crab meat to the soup.
- Simmer gently for 5-7 minutes or until fish is cooked through and shrimp turns pink.
- Remove bay leaf. Serve hot, with a dollop of sour cream and fresh herbs (optional).
