Ingredients

  • 1 lb macaroni
  • 4 cups mixed vegetables (e.g. broccoli, cauliflower, carrots, mushrooms, spinach), chopped
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups grated cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the macaroni in a large pot of boiling salted water according to package instructions. Drain the pasta and set it aside.
  3. In the same pot, sauté the mixed vegetables until tender, about 5-7 minutes. Set aside.
  4. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
  5. Gradually whisk in the milk and bring to a simmer. Stir in the cheese until melted and smooth. Stir in the salt, black pepper, garlic powder, and cayenne pepper.
  6. Add the cooked macaroni and vegetables to the cheese sauce and stir until coated.
  7. In a separate bowl, mix the breadcrumbs and olive oil together.
  8. Transfer the macaroni and cheese mixture to a 9×13 inch baking dish. Sprinkle the breadcrumb mixture on top.
