Ingredients
- 1 lb macaroni
- 4 cups mixed vegetables (e.g. broccoli, cauliflower, carrots, mushrooms, spinach), chopped
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 2 cups milk
- 2 cups grated cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 cup breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F.
- Cook the macaroni in a large pot of boiling salted water according to package instructions. Drain the pasta and set it aside.
- In the same pot, sauté the mixed vegetables until tender, about 5-7 minutes. Set aside.
- Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in the milk and bring to a simmer. Stir in the cheese until melted and smooth. Stir in the salt, black pepper, garlic powder, and cayenne pepper.
- Add the cooked macaroni and vegetables to the cheese sauce and stir until coated.
- In a separate bowl, mix the breadcrumbs and olive oil together.
- Transfer the macaroni and cheese mixture to a 9×13 inch baking dish. Sprinkle the breadcrumb mixture on top.
- Bake for 25-30 minutes, until the top is golden brown and the sauce is bubbly.
