Mackerel en Papillote with Fennel Recipe

Ingredients:
- 2 fresh mackerel fillets

Directions:

- In a sauté pan, heat some olive oil over medium-high heat. Add garlic, fennel, and onion. Cook for 5-7 minutes until soft. Season with salt and black pepper.
- Divide the cooked vegetables in the center of each parchment heart.
- Place one mackerel fillet on top of the vegetables, skin side down.
- Place 2 or 3 lemon slices and 2 thyme sprigs on top of the mackerel fillet. Season with salt and black pepper and drizzle with olive oil.
- Close each heart by bringing both sides together and crimping the edges together to create a tight seal.
- Place the parchment hearts on a large baking sheet and bake for 15-18 minutes until the parchment paper puffs up and the fish is cooked through.
