Mackerel Fillets with Spelled Risotto and Tomato Tatin Recipe
Ingredients:
- 4 mackerel fillets
- 1 cup spelled grains
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken or vegetable stock
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 tomatoes, sliced
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Mackerel Fillets:
- Preheat the oven to 400˚F.
- Brush the mackerel fillets with olive oil and season with salt and pepper.
- Place the fillets on a baking sheet and bake for 10-12 minutes, or until cooked through.
Spelled Risotto:
- In a large saucepan, heat the olive oil and butter over medium heat.
- Add the onion and garlic and cook until softened.
- Add the spelled grains and stir to coat with the oil and onion mixture.
- Add the stock, one ladleful at a time, stirring until each addition is absorbed before adding the next one.
- Continue cooking and stirring the spelled until it is tender and creamy, about 20-25 minutes.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
Tomato Tatin:
- Preheat the oven to 375˚F.
- Arrange the tomato slices in a single layer in a 9-inch baking dish.
- Mix the honey and balsamic vinegar together and drizzle over the top of the tomatoes.
- Bake for 30 minutes, or until the tomatoes are tender and caramelized.
- Let cool for a few minutes before serving.
Serving Suggestions:
Serve the mackerel fillets on a bed of the spelled risotto and top with a slice of tomato tatin. Drizzle with a little extra balsamic vinegar if desired. This dish is best served fresh and hot. Enjoy!
