Mackerel fillets, spelled risotto and tomato tatin


Mackerel Fillets with Spelled Risotto and Tomato Tatin Recipe

Ingredients:

  • 4 mackerel fillets
  • 1 cup spelled grains
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable stock
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 tomatoes, sliced
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

Mackerel Fillets:

  1. Preheat the oven to 400˚F.
  2. Brush the mackerel fillets with olive oil and season with salt and pepper.
  3. Place the fillets on a baking sheet and bake for 10-12 minutes, or until cooked through.

Spelled Risotto:

  1. In a large saucepan, heat the olive oil and butter over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Add the spelled grains and stir to coat with the oil and onion mixture.
  4. Add the stock, one ladleful at a time, stirring until each addition is absorbed before adding the next one.
  5. Continue cooking and stirring the spelled until it is tender and creamy, about 20-25 minutes.
  6. Stir in the Parmesan cheese and season with salt and pepper to taste.

Tomato Tatin:

  1. Preheat the oven to 375˚F.
  2. Arrange the tomato slices in a single layer in a 9-inch baking dish.
  3. Mix the honey and balsamic vinegar together and drizzle over the top of the tomatoes.
  4. Bake for 30 minutes, or until the tomatoes are tender and caramelized.
  5. Let cool for a few minutes before serving.

Serving Suggestions:

Serve the mackerel fillets on a bed of the spelled risotto and top with a slice of tomato tatin. Drizzle with a little extra balsamic vinegar if desired. This dish is best served fresh and hot. Enjoy!
