Marengo Veal Recipe
Ingredients:
- 1 1/2 pounds veal cutlets, pounded thin
- 1/4 cup all-purpose flour
- 1/4 cup olive oil
- 1/2 cup diced onion

Directions:
- Preheat oven to 350°F.
- Dredge the veal cutlets in the flour until evenly coated.
- In a large skillet, heat the olive oil over medium-high heat. Add the veal cutlets and brown on both sides, about 2 minutes per side. Transfer to a plate.
- Add the onion, celery, and carrot to the skillet. Cook, stirring frequently, until the vegetables are softened, about 5 minutes. Add the garlic, thyme, rosemary, salt, and pepper and cook for an additional minute.
- Add the crushed tomatoes, wine, and chicken broth and stir to combine. Bring to a simmer and cook for 5 minutes.
- Return the veal cutlets to the skillet, spooning the sauce over them. Cover the skillet with a lid or foil and transfer to the oven. Bake for 20 minutes, or until the veal is cooked through and tender.
- Garnish with chopped fresh parsley and serve hot.
