Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup sliced candied lemon

Directions

  1. In a large bowl, mix together the ground beef, breadcrumbs, parmesan cheese, parsley, basil, egg, salt, and pepper.
  2. Form into small meatballs, about 1 inch in diameter.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the meatballs and cook until browned all over, about 8 minutes.
  5. Remove the meatballs from the skillet and set aside.
  6. Add the onion and garlic to the same skillet and cook until softened, about 5 minutes.
  7. Add the crushed tomatoes and chicken broth, and bring to a boil.
  8. Reduce heat to low and cook for 10 minutes.
  9. Add the meatballs back to the skillet and simmer for 15 minutes.
  10. Before serving, sprinkle the candied lemon over the meatballs.
