Menemen Recipe
Ingredients:
- 3 tablespoons of olive oil
- 1 onion, finely chopped
- 2 green peppers, cubed
- 4 tomatoes, chopped
- 4-5 eggs
- 1/2 teaspoon of salt
- Freshly ground black pepper
- 1/2 teaspoon of paprika
- Fresh parsley or cilantro, chopped
Instructions:
- Heat the olive oil in a frying pan on medium heat.
- Add the onions and sauté for 2-3 minutes until they turn slightly golden.
- Add the green peppers and continue cooking for another 2 minutes.
- Add the chopped tomatoes, salt, black pepper and paprika, and cook uncovered for about 7-8 minutes until the tomatoes are soft and the mixture is golden.
- Add the beaten eggs and stir constantly to scramble and incorporate it with the tomato mixture. Cook for 5-7 minutes until the eggs are cooked to your preference.
- Sprinkle fresh parsley or cilantro on top.
- Enjoy hot with bread or toast.
