Millefeuille Salad Recipe

Ingredients

  • 4 sheets of puff pastry
  • 1 large red onion, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 2 yellow bell peppers, thinly sliced
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the puff pastry sheets onto a baking sheet lined with parchment paper.
  3. Bake the puff pastry in the oven for 15-20 minutes or until golden brown.
  4. Remove the puff pastry from the oven and let them cool.
  5. In a large bowl, toss the sliced onions and bell peppers with the olive oil and balsamic vinegar.
  6. Season the vegetables with salt and pepper to taste.
  7. To assemble the millefeuille salad, place a sheet of puff pastry onto a plate.
  8. Top the puff pastry with a layer of the vegetable mixture.
  9. Sprinkle some feta cheese and chopped parsley over the vegetables.
  10. Repeat the layering process with the remaining puff pastry, vegetables, feta cheese and parsley.
  11. Finish with a final layer of puff pastry.
  12. Refrigerate the salad for at least an hour before serving.
