Millefeuille Salad Recipe
Ingredients
- 4 sheets of puff pastry
- 1 large red onion, thinly sliced
- 2 red bell peppers, thinly sliced
- 2 yellow bell peppers, thinly sliced
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
- 1/2 cup crumbled feta cheese
- 1/2 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the puff pastry sheets onto a baking sheet lined with parchment paper.
- Bake the puff pastry in the oven for 15-20 minutes or until golden brown.
- Remove the puff pastry from the oven and let them cool.
- In a large bowl, toss the sliced onions and bell peppers with the olive oil and balsamic vinegar.
- Season the vegetables with salt and pepper to taste.
- To assemble the millefeuille salad, place a sheet of puff pastry onto a plate.
- Top the puff pastry with a layer of the vegetable mixture.
- Sprinkle some feta cheese and chopped parsley over the vegetables.
- Repeat the layering process with the remaining puff pastry, vegetables, feta cheese and parsley.
- Finish with a final layer of puff pastry.
- Refrigerate the salad for at least an hour before serving.
