Moorish Rabbit Recipe

Ingredients:

  • 2 rabbits, cleaned and cut into serving pieces
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tomatoes, chopped
  • 1/2 cup chicken stock
  • 1/2 cup white wine
  • 1/2 cup pitted green olives
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Instructions:

  1. Preheat oven to 350°F.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear rabbit pieces until golden brown, about 2-3 minutes each side. Remove and set aside.
  3. In the same Dutch oven, sauté onions and garlic until softened, about 3-4 minutes.
  4. Add bell peppers and continue cooking for another 3-4 minutes.
  5. Add chopped tomatoes, chicken stock, white wine, green olives, cumin, smoked paprika, salt, and pepper. Mix well.
  6. Add seared rabbit pieces to the Dutch oven and spoon the sauce over it.
  7. Cover the Dutch oven and bake in the oven for 1.5 hours, or until rabbit is cooked through and tender.
  8. Remove from oven and allow to cool for 5 minutes before serving.
