Mozzarella Meatloaf Recipe

Ingredients:

  • 2 lbs. ground beef
  • 1 cup seasoned breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions:

  1. Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, beaten eggs, milk, 1 cup of shredded mozzarella cheese, chopped onion, minced garlic, dried basil, dried oregano, salt, and black pepper. Mix well until fully combined.
  3. Transfer the meat mixture to the prepared loaf pan and press down to form an even layer.
  4. Bake in the preheated oven for 40 minutes.
  5. Remove the meatloaf from the oven and sprinkle the remaining shredded mozzarella cheese on top.
  6. Return the meatloaf to the oven and bake for an additional 20 minutes or until the cheese is melted and golden brown.
