Mtsolola, fried spicy beef with flavors of breadfruit and green bananas


Mtsolola Recipe

Ingredients:

  • 500g beef, cut into thin slices
  • 1 large breadfruit, peeled and cut into small pieces
  • 4 large green bananas, peeled and cut into small pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 1 teaspoon dried thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions:

  1. Toss the beef slices with 1/2 teaspoon each of salt and black pepper, and let them sit at room temperature for about 15 minutes.
  2. In a large frying pan, heat 1 tablespoon of oil over high heat.
  3. Add the beef slices and fry for about 3 minutes on each side, until browned and crispy. Transfer to a plate.
  4. In the same pan, add 1 tablespoon of oil and fry the onion and garlic for about 2 minutes, until softened.
  5. Add the breadfruit and green bananas to the pan, along with all the spices and the remaining 1/2 teaspoon each of salt and black pepper, and stir to combine.
  6. Cover the pan and cook the mixture over medium heat for about 10 minutes, stirring occasionally, until the breadfruit and bananas are tender.
  7. Return the beef to the pan and stir to combine. Cook for another 2-3 minutes until everything is heated through and well combined.
  8. Serve hot and enjoy!
