Mtsolola Recipe
Ingredients:
- 500g beef, cut into thin slices
- 1 large breadfruit, peeled and cut into small pieces
- 4 large green bananas, peeled and cut into small pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger paste
- 1 teaspoon dried thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions:
- Toss the beef slices with 1/2 teaspoon each of salt and black pepper, and let them sit at room temperature for about 15 minutes.
- In a large frying pan, heat 1 tablespoon of oil over high heat.
- Add the beef slices and fry for about 3 minutes on each side, until browned and crispy. Transfer to a plate.
- In the same pan, add 1 tablespoon of oil and fry the onion and garlic for about 2 minutes, until softened.
- Add the breadfruit and green bananas to the pan, along with all the spices and the remaining 1/2 teaspoon each of salt and black pepper, and stir to combine.
- Cover the pan and cook the mixture over medium heat for about 10 minutes, stirring occasionally, until the breadfruit and bananas are tender.
- Return the beef to the pan and stir to combine. Cook for another 2-3 minutes until everything is heated through and well combined.
- Serve hot and enjoy!
