Mushroom Risotto Recipe

Ingredients:

  • 4 tablespoons unsalted butter
  • 1 cup Arborio rice
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 pound mixed wild mushrooms, sliced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add onion and garlic and cook until fragrant and softened, about 3 minutes.
  2. Add Arborio rice and stir until coated with butter. Add wine and stir constantly until absorbed.
  3. Add 1 cup of broth and stir constantly until the broth is absorbed. Repeat with remaining broth, stirring constantly until rice is cooked and creamy. This should take about 20-25 minutes.
  4. Meanwhile, in a large skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add mushrooms and cook until golden brown and softened, about 8-10 minutes.
  5. Add the mushrooms to the risotto and stir to combine. Add Parmesan cheese and parsley and stir to combine.
  6. Season with salt and pepper to taste, and serve immediately.
