Mussels Bulgur with Dill
Ingredients
- 1 lb mussels
- 1 cup bulgur
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons dried dill
- 2 cups water or vegetable broth
- Salt and pepper to taste
Instructions
- Clean the mussels: scrub them with a brush under cold running water. Discard any that are open and won’t close when tapped, or any that have broken shells.
- Heat the olive oil in a large saucepan over medium heat. Add the onion and sauté for 5 minutes until it is soft and translucent, stirring often. Add the garlic and cook for 1 more minute.
- Add the bulgur to the pan and stir to coat with the onion and garlic mixture. Add the dill, salt, and pepper, then pour in the water or vegetable broth. Bring to a simmer and cook for 5-10 minutes until the bulgur is tender and the liquid has been absorbed.
- Add the mussels to the pan, cover with a lid, and cook for 5-8 minutes until the mussels are open and cooked through.
- Discard any mussels that are still closed, then serve hot, garnished with fresh dill and lemon wedges if desired.
