Mussels with Cream of Peas Recipe
Ingredients:
- 2 lbs fresh mussels
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1/4 cup white wine
- 1/2 cup vegetable broth
- 1 cup frozen peas
- 1/2 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- Clean the mussels, scrubbing them and removing the beards.
- In a large pan, melt the butter and sauté the onions and garlic until soft and fragrant.
- Add the mussels to the pan and pour in the white wine and vegetable broth over them. Cover and steam for 5-7 minutes until the mussels have opened. Discard any mussels that remain closed.

- Add the heavy cream to the pea puree and stir until well combined. Season with salt and pepper to taste.
- Bring the pea cream to a boil, reduce the heat, and simmer for another 5 minutes until the sauce thickens.
- Pour the pea cream over the mussels and serve immediately.
