Mussels with Cream of Peas Recipe

Ingredients:

  • 2 lbs fresh mussels
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup white wine
  • 1/2 cup vegetable broth
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. Clean the mussels, scrubbing them and removing the beards.
  2. In a large pan, melt the butter and sauté the onions and garlic until soft and fragrant.
  3. Add the mussels to the pan and pour in the white wine and vegetable broth over them. Cover and steam for 5-7 minutes until the mussels have opened. Discard any mussels that remain closed.
  4. Transfer the mussels to a serving platter and keep them warm.
  5. To the same pan where you cooked the mussels, add the frozen peas and cook for 2-3 minutes until the peas are hot and tender.
  6. Puree the peas in a blender or food processor until smooth. Return the puree to the pan.
  7. Add the heavy cream to the pea puree and stir until well combined. Season with salt and pepper to taste.
  8. Bring the pea cream to a boil, reduce the heat, and simmer for another 5 minutes until the sauce thickens.
  9. Pour the pea cream over the mussels and serve immediately.
