Ocean Pineapple-Coconut Skewers

Ingredients:

  • 1 pound of shrimp, peeled and deveined
  • 1 can of pineapple chunks, drained
  • 1 red bell pepper, seeded and chopped into medium-sized pieces
  • 1 green bell pepper, seeded and chopped into medium-sized pieces
  • 1 cup of shredded coconut
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 12 skewers

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Thread the shrimp, pineapple, and bell peppers onto skewers, alternating between the ingredients.
