Omelettes with herbs, asparagus and ham

Ingredients:

  • 6 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped fresh herbs (such as parsley, chives, and thyme)
  • 1/2 pound asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup diced ham
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions:

  1. Beat the eggs and milk together in a large bowl. Add the chopped herbs and salt and pepper to taste.
  2. Heat the butter in a non-stick skillet over medium-high heat. Once melted, add the asparagus and ham and sauté for 3-4 minutes until the asparagus is tender.
  3. Pour the egg mixture into the skillet and let cook without stirring for 3-4 minutes, or until the edges start to set.
  4. Using a spatula, lift the edges of the omelette and let the runny eggs flow underneath, until the top is mostly set.
  5. Flip the omelette gently using a spatula and cook on the other side for an additional 1-2 minutes, until fully set.
  6. Slide the omelette onto a cutting board and slice into wedges. Serve hot.
