Orange Velouté

Ingredients:

  • 4 large oranges
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper

Instructions:

  1. Peel and segment the oranges, removing all of the white pith. Set aside.
  2. In a large pot, melt the butter over medium heat.
  3. Add the flour and whisk until combined. Cook for 1-2 minutes to make a roux.
  4. Slowly whisk in the broth until no lumps remain.
  5. Add the orange segments and bring to a boil.
  6. Reduce the heat to low and simmer for 10-15 minutes.
  7. Remove from heat and stir in the heavy cream.
  8. Using an immersion blender, blend the mixture until smooth.
  9. Season with salt and pepper to taste.
  10. Serve hot.
