Orange Velouté
Ingredients:
- 4 large oranges
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper
Instructions:
- Peel and segment the oranges, removing all of the white pith. Set aside.
- In a large pot, melt the butter over medium heat.
