Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 cup diced water chestnuts

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced

  • 1 tablespoon water

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Pound the chicken breasts between two sheets of plastic wrap to an even thickness.
  3. In a large mixing bowl, mix together the diced peppers and water chestnuts.
  4. In a separate mixing bowl, mix together the hoisin sauce, soy sauce, rice vinegar, sesame oil, ginger, and garlic.
  5. Combine the sauce with the diced vegetables and mix well.
  6. Place one chicken breast on a piece of plastic wrap and spoon half of the vegetable mixture on top of the chicken breast.
  7. Roll the chicken breast tightly around the vegetable mixture, using the plastic wrap as a guide.

  10. Cover the dish with foil and bake in the oven for 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  11. Remove the foil and bake for an additional 5-10 minutes to brown the top.
  12. Remove from oven and let cool for at least 15 minutes before slicing and serving.
