Paella Recipe

Ingredients:

  • 1 pound of chicken thighs, cut into bite-size pieces
  • 1/2 pound of chorizo sausage, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 can of diced tomatoes
  • 2 cups of chicken broth
  • 2 cups of Arborio rice
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of saffron threads
  • 1/2 pound of shrimp, peeled and deveined
  • salt and pepper, to taste
  • lemon wedges and chopped parsley, for garnish

Instructions:

  1. Preheat the oven to 375°F.
  2. In a paella pan or large, oven-safe skillet, cook the chicken and chorizo over medium-high heat until browned.
  3. Add the onion, garlic and red bell pepper, and cook for about 5 minutes, until the vegetables are softened.
  4. Add the diced tomatoes, chicken broth, rice, smoked paprika, saffron threads, salt and pepper. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 15 minutes, stirring occasionally. The rice should be slightly undercooked at this point.
  6. Add the shrimp on top of the rice and return to a simmer.
  7. Transfer the pan to the oven and bake for about 10-15 minutes, until the shrimp are cooked and the rice is tender.
  8. Remove from the oven and let rest for 10 minutes before serving.
  9. Garnish with lemon wedges and chopped parsley.
