Paella Recipe
Ingredients:
- 1 pound of chicken thighs, cut into bite-size pieces
- 1/2 pound of chorizo sausage, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 can of diced tomatoes
- 2 cups of chicken broth
- 2 cups of Arborio rice
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of saffron threads
- 1/2 pound of shrimp, peeled and deveined
- salt and pepper, to taste
- lemon wedges and chopped parsley, for garnish
Instructions:
- Preheat the oven to 375°F.
- In a paella pan or large, oven-safe skillet, cook the chicken and chorizo over medium-high heat until browned.
- Add the onion, garlic and red bell pepper, and cook for about 5 minutes, until the vegetables are softened.
- Add the diced tomatoes, chicken broth, rice, smoked paprika, saffron threads, salt and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 15 minutes, stirring occasionally. The rice should be slightly undercooked at this point.
- Add the shrimp on top of the rice and return to a simmer.
- Transfer the pan to the oven and bake for about 10-15 minutes, until the shrimp are cooked and the rice is tender.
- Remove from the oven and let rest for 10 minutes before serving.
- Garnish with lemon wedges and chopped parsley.
