Pan-fried Prawns in Cider

Ingredients:

  • 300g raw king prawns, peeled and deveined
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 onion, chopped
  • 2 red apples, peeled and chopped
  • 1 cup of dry cider
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Heat the olive oil in a frying pan over medium heat.
  2. Add the minced garlic and chopped onion and cook until the onion is translucent.
  3. Add the chopped red apples and cook for a further 2-3 minutes until they start to soften.
  4. Pour in the dry cider and bring to a boil.
  5. Reduce the heat to low and simmer for 10-15 minutes or until the cider has reduced by half.
  6. Sprinkle in the smoked paprika and season with salt and pepper to taste.
  7. Add the raw king prawns to the pan and cook for 2-3 minutes on each side or until they turn pink and are cooked through.
  8. Garnish with fresh parsley and serve immediately.
