Pappardelle with Asparagus and Prawns Recipe

Ingredients:

  • 400g Pappardelle Pasta
  • 2 bunches of asparagus, trimmed and cut into 2-inch pieces
  • 450g raw prawns, peeled and deveined
  • 4 tbsp butter
  • 4 cloves of garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley, for garnish

Directions:

  1. Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook until al dente, according to package directions. Reserve 1 cup of pasta water and drain the rest.
  2. In a large skillet, melt the butter over medium-high heat. Add the asparagus and cook for 3-4 minutes or until just tender. Remove from the skillet and set aside.
  3. In the same skillet, add the prawns and garlic. Cook for 2-3 minutes or until pink.
  4. Add the wine and chicken broth to the skillet. Bring to a boil and reduce the heat to low. Simmer for 5 minutes.
  5. Add the heavy cream and Parmesan cheese to the skillet. Stir until the cheese is melted and the sauce is smooth.
  6. Add the cooked pasta and asparagus to the skillet with the sauce. Toss until the pasta is coated in the sauce. If the sauce is too thick, add some reserved pasta water to thin it out.
  7. Season with salt and pepper, to taste. Garnish with fresh parsley.
