Parmentier of Pig’s Feet Recipe

Ingredients

  • 4 pig’s feet
  • 2 onions, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 bay leaf
  • 2 sprigs of thyme
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 4 large potatoes, peeled and chopped
  • 1/2 cup butter
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the pig’s feet, onions, garlic, carrots, celery, bay leaf, thyme, and chicken broth. Bring the mixture to a boil over high heat and then reduce the heat to low. Cover and let simmer for about 2 hours or until the meat is tender and falls off the bone. Remove the pig’s feet from the pot and let them cool.
  2. Remove the bones and shred or finely chop the meat. Discard the fat and return the meat to the pot. Add salt and pepper to taste.
  3. Preheat the oven to 375°F (190°C). In a separate pot, cook the potatoes until they are tender. Drain them and mash them with butter, milk, salt, and pepper.
  4. Place half of the mashed potatoes at the bottom of a baking dish. Top with the pig’s feet mixture and then the remaining mashed potatoes. Bake for 30-40 minutes or until the top is golden brown.
