Parmentier of Pig’s Feet Recipe
Ingredients
- 4 pig’s feet
- 2 onions, chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 bay leaf
- 2 sprigs of thyme
- 2 cups chicken broth
- 2 tbsp olive oil
- 4 large potatoes, peeled and chopped
- 1/2 cup butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, place the pig’s feet, onions, garlic, carrots, celery, bay leaf, thyme, and chicken broth. Bring the mixture to a boil over high heat and then reduce the heat to low. Cover and let simmer for about 2 hours or until the meat is tender and falls off the bone. Remove the pig’s feet from the pot and let them cool.
