Partridges with Cabbage

Ingredients:

  • 4 Partridges, cleaned and gutted
  • 1 head of cabbage, chopped
  • 6 bacon slices
  • 2 onions, chopped
  • 4 garlic cloves, chopped
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. In a skillet, cook bacon until it is crispy. Remove and set aside.
  3. Season the partridge with salt and pepper. In the same skillet, brown the partridges on all sides until they are golden brown. This step should take about 8 minutes. Remove the partridges and set aside.
  4. In the same skillet, add the onions, garlic, thyme, and rosemary. Cook until the onions and garlic are tender and fragrant.
  5. Add the chopped cabbage to the onions and garlic and cook for 5 minutes.
  6. Place the cooked cabbage in a baking dish and place the partridges on top of the cabbage. Crumble the cooked bacon over the partridges.
  7. Drizzle olive oil over the partridges and bake in the oven for 45 minutes or until the partridge is cooked through and the cabbage is tender.
