Pasta with pesto

Pasta with Pesto Recipe

Ingredients:

  • 12 ounces of pasta
  • 2 cups of fresh basil leaves
  • 2 garlic cloves, peeled
  • 1/3 cup of pine nuts
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of extra-virgin olive oil
  • Salt and pepper to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, or according to package instructions.
  2. In the meantime, toast the pine nuts in a dry skillet over medium heat, stirring occasionally, until lightly golden and fragrant. Be careful not to burn them.
  3. In a food processor, combine the basil leaves, garlic, toasted pine nuts, Parmesan cheese, salt, and pepper. Pulse until finely chopped.
  4. While the food processor is running, slowly pour in the olive oil in a steady stream. Continue processing until the pesto is smooth and creamy.
  5. Drain the pasta and reserve 1/2 cup of the pasta cooking water. Return the pasta to the pot and stir in the pesto and a splash of the pasta cooking water. Toss until the pasta is evenly coated with the pesto. Add more pasta cooking water if needed to thin out the sauce.
  6. Taste and adjust seasoning as necessary. Serve hot, garnished with additional Parmesan cheese and fresh basil leaves if desired.
