Penne with Anchovies and Capers Recipe

Ingredients

  • 12 oz. penne pasta
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 4 anchovy fillets, chopped
  • 2 tbsp. capers, drained and chopped
  • 1/4 tsp. red pepper flakes
  • 1/2 cup parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot of salted boiling water, cook penne pasta according to package directions. Drain and set aside.
  2. In a large saucepan, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
  3. Add anchovies, capers, and red pepper flakes and cook for 1-2 minutes, stirring occasionally.
  4. Add cooked penne pasta to the saucepan and toss well to coat with the anchovy-caper mixture.
  5. Add parsley and season with salt and pepper as needed.
  6. Divide into serving bowls and top with grated Parmesan cheese. Serve hot.
