Pesked Street Food – Delight

Ingredients:

  • 1 pound white fish fillets (cod, haddock or pollock)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 cups panko breadcrumbs
  • Oil for frying
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sliced green onions
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped dill
  • 1/4 cup chopped mint

Instructions:

  1. Cut the fish fillets into 1 inch strips and set aside.
  2. In a shallow dish, mix the flour, garlic powder, paprika, thyme, oregano, salt, and pepper.
  3. In another shallow dish, whisk together the eggs and milk.
  4. In a third shallow dish, add the panko breadcrumbs.
  5. Coat each fish strip in the flour mixture, then dunk it in the egg mixture, and finally coat it in the panko breadcrumbs.
  6. Heat oil in a frying pan over medium-high heat.
  7. Add the breaded fish strips in batches and fry until golden brown, about 2-3 minutes per side.
  8. Remove the cooked fish strips from the pan and place them on a paper towel-lined tray to drain.
  9. In a small bowl, mix together the mayonnaise, Greek yogurt, honey, Dijon mustard, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper.
  10. In a serving dish, place the fried fish strips and drizzle the sauce on top.
  11. Sprinkle sliced green onions, chopped parsley, cilantro, dill, and mint on top of the fish and sauce.
  12. Serve hot with fresh lemon wedges and additional sauce on the side.
